With this being my first bake of the new year I thought it had best be something that will make me feel a little less guilty for eating cake after all of the Christmas gorging I've taken part in in the past few weeks. As a result, this sugar- free blueberry tray bake recipe is what I came up with and, although lacking in sugar, it is definitely not lacking in flavour and I am definitely feeling a little less guilty! If you're after a recipe that gives you soft, Millie's cookie type cookies then this will satisfy your needs. I've personally tried so many cookie recipes and the end product is always either too crispy or in between soft and crispy, but after trial and error I've perfected the soft cookie recipe! The recipe only takes about an hour to bake including prep time and the end result will definitely be worth it- especially with Christmas looming, baking is always the perfect hobby to have during festive seasons and these are the perfect little treat to have in the kitchen when people pop over to visit! If you're a student like me you'll know that baking isn't exactly the cheapest of hobbies, but this little recipe is easy- peasy and nice and cheap! If you don't want the faff of baking a huge batch of brownies and don't want to buy a pack from the shop and end up eating a weeks worth of calories then this is the best thing for you. It will most probably be the quickest bake you'll ever do, taking only about 4 minutes to prep and cook- perfect! I had my doubts about the method when I first saw it, as the microwave sometimes isn't the best method for cooking the nicest of meals, however my skepticism had only meant I'd missed out on a fun and quick and easy form of baking with the best chocolately result! The shortbread is a quick to the point recipe and it makes a crumbly soft textured shortbread and once that's made all you need to be able to do is layer caramel and melted chocolate! You can make your own homemade salted caramel of course but if you're on a budget and/ or on a time restraint too then buying a can of ready made carnation caramel makes it all that easier and just as yummy. I thought I'd make a small mention on this subject as I've heard so many people become disheartened from baking because they don't have all of the 'right' equipment or the best of the best equipment. I've personally been baking for a good few years now and only recently have I acquired a good range of baking tools (by these I mean fondant tools, cookie cutters, piping nozzles, etc) and my lack of tools in the past never stopped me! You really don't need the most amazing or expensive tools to be a good baker so don't let it dishearten you, you can find so many cheap tools off of eBay or other online shops and they help produce just as good bakes as the top of the brand stuff! The tools that I used for my Halloween Shortbread were only £2.50 cutters from eBay and I loved the outcome from them, so if you're thinking 'oh I don't have the top of the range tools so I can't do it', then don't let that stop you because your bakes will turn out just as lovely with cheaper tools than they would with expensive ones! Which can only result in one thing, festive themed biscuits! My take on festive biscuits will be in the form of gorgeous buttery shortbread, with a Halloween twist of course. Find the recipe under the recipes tap and under Halloween Shortbread, this is a great recipe as it was given to me by my Gran (Grandparents's recipes are always the best) so you know it'll be good, and you can make just simple lovely shortbread without the Halloween twist if you so desire!
