Soft and Crispy Chocolate Chip Cookies

What you'll need:
- 170g butter (melted)
- 200g light brown sugar
- 100g caster sugar
- 1 egg
- 1 egg yolk
- 250g all purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- chopped chocolate or chocolate chips
1. Preheat the oven to 160c/ gas mark 3 and grease a large baking tray.
2. melt your butter in a bowl and mix together with your brown sugar and your caster sugar.
3. Sift your flour and baking powder into a bowl, add your salt and keep to one side.
4. Add the vanilla extract, egg and egg yolk into the butter and sugar mixture and whisk until all the ingredients are blended. You can do this on a light setting with an electric whisk however I find it easier to do it with a wooden spoon.
5. Once all mixed slowly add the flour and baking powder to the mix, add about a quarter at a time and then mix well after each quarter.
6. Now add your chocolate chips or your chopped chocolate, I used a chopped up bar of milk chocolate in the picture above however you could use dark or white chocolate or add nuts or fruit etc.
7. Place in the oven on the middle shelf and bake for approx 15 minutes, I prefer to take them out when they have just turned slightly golden and are still a bit pale, this way they only stay ever so slightly crispy and the inside will be softer.
8. Once baked take them out of the oven and carefully remove them from your tray, place on a wire rack too cool or enjoy them warm!
Tip: As the cookies bake I like to slightly pat them down when they have risen slightly, this way they are more of a solid cookie rather then having any little air gaps and should come out with a good texture, however try not to press too hard as it may make them too solid, just tap a spoon slightly on the top if you attempt this, (maybe tap half of the cookies down and leave the other half to bake normally and see which way you prefer)
Tip: If you've let your cookies cool, place one in the microwave for 15- 20 seconds (depending on the size), this will make them a lot softer and will make them warm again and give that just-out-of-the-oven feel!
