Salted Caramel Chocolate Brownies

This recipe is very similar to my other brownie recipe, just mixed with salted caramel but it makes such a difference, if you like caramel and gooey brownies then give this recipe a try, you'll love it
This recipe is very similar to my other brownie recipe, just mixed with salted caramel but it makes such a difference, if you like caramel and gooey brownies then give this recipe a try, you'll love it
1. Grease a baking tray and preheat the oven to 180c/ Gas 4, a tray that is 23cm and 4cm deep is usually best for brownies.
2. Melt your chocolate and butter in a pan on a low heat, when all is finally melted then take it off the heat to cool.
3. In a seperate bowl whisk the eggs, gradually adding the sugar as you whisk, whisk until it is pale and has doubled in size, roughly whisk for about 3-5 minutes.
5. When whisked and the chocolate mixture has cooled (you need to make sure it really has cooled otherwise if it is too warm it will turn your egg mixture into scrambled egg!) add the chocolate mix to the eggs and sugar and carefully fold together until all combined.
6. Now add your sieved cocoa powder and flour to the chocolate mix and carefully fold together until it is completely mixed.
7. In a seperate bowl pour out the caramel and mix it, this will just make it a bit loser, then add about 5 tbsp of caramel to the brownie mixture and mix together.
8. Put half of the brownie mix into your greased tin and spread evenly, then add a layer of caramel on top (leaving enough caramel to decorate the brownie as seen on the picture above) and then add the other half of the brownie mix and carefully spread it on top.
9. Once the brownie mix is evenly spread, place it in the centre of your oven and bake for approximately 25- 30 minutes, I like to take it out when theres a thin crust layer on top but the mixture is slightly wobbly in the middle when you give the tin a shake, this way they will be gooey. Once cooked take them out of the oven and allow them to cool in the tin, now take a spoon with your caramel and drizzle it over the top to give a nice pattern, you can do it as seen in the picture above or your own style!
